It’s the time of year when the end-of-the-day trip across the parking lot from your truck to the travel center restaurant seems like it requires a sled and huskies. And what are you trudging toward? While restaurant food can be very good, there might be additional sodium or other ingredients full of fat and calories that you can certainly do without.

There’s an alternative that’s cheaper, healthier and carries virtually no risk of frostbite. Cook in your cab. We know what you’re thinking – you want something tastier than snacks out of cellophane. Well, with the right recipes and a few 12-volt appliances you can make delicious, healthful meals that will keep you warm and well-fed throughout winter.

We’ve taken some healthy recipes from Carolyn O’Byrne book, “Gut Instinct”, that we modified to fit in the RoadPro 1.5 Quart Slow Cooker. Make sure to check out Carolyn’s book that offers nutritional and lifestyle advice specifically for truckers, as well as additional recipes.

We also included a Mac n’ Cheese recipe from the RoadPro Kitchen that works perfectly in the RoadPro 1.5 Quart Slow Cooker.   

All the ingredients can be kept safely in a RoadPro cooler until it’s time to cook. We recommend making more than you need for one meal, so you will have leftovers to enjoy.

 

Lime Cilantro Chicken

Ingredients
1 chicken breast
Juice from ½ of a lime
1 handful of fresh chopped cilantro
1 clove of garlic
¼ cup of onion, diced
½ can of beans of choice, drained
1/4 tsp cumin
1/4 tsp rosemary
Salt and pepper

Directions
Add all ingredients and cook on low for 8 hours in the slow cooker.

 

Vegetable Lentil Soup

Ingredients
1 cups of dried lentils
1 cup of any broth (organic, MSG-free)
¼ cup water
¼ cup of onion, chopped
1 cup of vegetables of choice (frozen or fresh) (Ideas: carrots, peas, celery, squash, sweet potato)
8 oz diced tomatoes
2 cloves minced garlic or organic garlic powder to taste
Salt and pepper to taste

Directions
Place all ingredients in the slow cooker. Cook on low for 7-8 hours or until vegetables are tender.

 

Beef and Broccoli

Ingredients
​½ lb. thinly sliced beef
​½ cup beef broth (organic, MSG-free)
1 clove garlic minced
1 tsp honey
½ bag frozen broccoli florets

Directions
Place all ingredients except broccoli into slow cooker. Cook covered on low for 5 hours. Add broccoli and cook additional 30 minutes on high.  

 

Hawaiian Chicken

Ingredients
2-3 chicken thighs or 1 chicken breast
1 small can of pineapple chunks in 100% juice
¼ cup onion
¼ cup bell pepper
1 tbsp honey
Salt and pepper

Directions
Combine ingredients in slow cooker and cook on low for 8 hours.  

    

 

RoadPro Slow Cooker Mac and Cheese

Ingredients
¾ cup milk
3.6 oz evaporated milk
1/3 tsp salt
¼ tsp pepper
¼ tsp paprika
1/3 lb elbow macaroni
1 ½ Tbsp margarine
3 oz. Cheddar cheese
2 oz. Monterey Jack cheese

Directions
In a separate bowl, whisk together milk, evaporated milk, salt, pepper and paprika. Pour the uncooked macaroni into your RoadPro® 1.5-Quart Slow Cooker. Top with margarine and cheeses. Pour the milk mixture on top and stir to combine. Press all the macaroni into the milk mixture, the best you can. Cover your RoadPro® Slow Cooker and cook for 2 hours, stirring once after one hour. The mac and cheese will be done when all the liquid is absorbed and the pasta is cooked.
