10 easy Recipes with 10 Ingredients or Less

Grocery shopping and storing ingredients, these are not simple tasks for truck drivers. Knowing this, RoadPro has sought out 10 ingredients to buy that can be used in at least 10 different recipes, to provide variety yet conserve time, money and space. Each recipe can be prepared in the cab of your truck and serve as a delicious breakfast, lunch, dinner or snack. Pick up these staples and make your life a little easier this week!

Recipe #1: Quick Egg and Potato Scramble

Melt 1 Tbsp. butter in large nonstick skillet on medium heat. Add 1 cups of potatoes (1/4 cup chopped onions and 1/2 small jalapeño pepper, chopped - optional); cook 7 to 8 min. or until potatoes are golden brown (and onions are tender), stirring frequently.

Beat 3 eggs and black pepper to taste in small bowl; add to skillet. Cook 3 min. or until eggs are set, stirring occasionally. Serve with a side of toast.

 

Recipe #2: Peanut Butter Oatmeal

In a medium saucepan set over medium heat, bring 1 3/4 cups milk to a boil, watching carefully so that it doesn't boil over. Stir in 1 cup oats, reduce heat to a simmer, and cook for 1 to 2 minutes, stirring occasionally. Remove from heat and cover for a few minutes. Stir in 2 Tbsp. peanut butter.

Additional ingredients you can add: banana, cinnamon, vanilla, and honey

 

Recipe #3: Peanut Butter Apple Oatmeal Smoothie

1 apple, 1/2 cup milk, 1 Tbsp. peanut butter, 2 Tbsp. oats, 1 cup ice - add all ingredients to a blender. Mix well.

Add to serving glass. 

Additional ingredients you can add: vanilla protein powder, vanilla extract, and cinnamon

 

Recipe #4: Apple Cheddar Panini

If you do not have a panini press, 2 skillets can act as one for this recipe. Simply put one on top of the panini while cooking to press it.

Lightly spread butter (or honey mustard) evenly over each slice of bread.

Layer thin apple slices and cheddar cheese slices over bread, using about ½ apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices. Lightly coat pan (or panini press) with cooking spray or butter.

Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted.

Remove from pan and allow to cool slightly before serving. 

 

Recipe #5: Mashed Potatoes

Place 2-3 potatoes (peeled & cut) in saucepan; add enough water to cover. Add salt to taste. Bring to a boil. Reduce heat to medium-low; cover loosely and boil gently for 15 to 20 minutes or until potatoes break apart easily when pierced with fork. Drain well.

Return potatoes to saucepan; shake gently over low heat for 1 to 2 minutes to evaporate any excess moisture.

Mash potatoes with potato masher until no lumps remain. Add butter, pepper and remaining salt; continue mashing, gradually adding enough milk to make potatoes smooth and creamy.

 

Recipe #6: Mashed Potato Pancakes

Take last night's leftover mashed potatoes and try out this new breakfast idea.

Combine the mashed potatoes (1 cup) with 1 beaten egg and add 2-4 Tbsp. flour 1 tablespoon at a time and stir until it's all well mixed.

Note: Add the flour slowly to achieve just the right texture. You will want the mixture to be dry enough that you're able to handle it and form patties, but not too dry and crumbly. Use flour-covered hands to make the patties.

Melt 1 Tbsp. of butter into a large frying pan over medium heat and place the cakes in the pan to fry. Be careful not to overcrowd the pan so you'll have room to flip them.

Allow each side to cook about 3-4 minutes until golden brown and crispy.

Continue to cook the pancakes in small batches, adding more butter in between each time. Serve warm. Top with sour cream and chopped scallions if desired!

 

Recipe #7: Eggs-N-Oats

1 whole egg, 2 egg whites 1/2 cup oats, 2 oz. milk (just more than a splash) - add all ingredients to bowl, mix well.

Spray non-stick spray (or butter) in a skillet or frying pan.

Add all ingredients; scramble as you would with ordinary eggs.

When eggs-n-oats reach desired texture (just like scrambled eggs--wet, dry, somewhere in between), remove from heat, and plate.

There are lots of options for seasoning such as: cayenne, hot sauce, and a moroccan spice blend. Some people make it sweet with honey, berries, bananas, cinnamon, splenda, agave nevtar, truvia, etc. Make it your own with different special ingredients. 

 

Recipe #8: Grilled Cheese Sandwich

Preheat skillet over medium heat. Generously butter one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add 1 slice of cheese. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with any remaining slices of bread, butter and cheese.

 

Recipe #9: Apples with Peanut Butter

Recognized as a very healthy snack by Livestrong, this protein filled recipe is great for between meals. Simply cut up an apple (Granny Smith is a popular choice) and spread with peanut butter. It's as simple as that! 

 

Recipe #10: Easy Cheesy Skillet Potatoes

We saved one of the best for last!

Before you begin, make sure you use a skillet with a lid. This is the key in getting your potatoes nice and soft without browning them too much.

In a large skillet, melt 1-2 Tbsp. butter over medium-low heat. Add 2-3 medium potatoes, peeled and diced. Sprinkle potatoes with garlic salt and oregano (optional).  Put the lid on the skillet and keep over medium-low heat.

Turn the potatoes every 3-5 minutes, until they reach your desired tenderness. If you like them on the softer side, cook for 15-20 minutes.

Once the potatoes are done the way you like them, remove the skillet from heat and sprinkle with 1/4 cup cheese. Put the lid back on and let sit another 5 minutes or so - until the cheese is nice and melted.
